Cakes & more..

Do you buy snacks for your children/wards in school or do they take the snacks from home to eat?  I happen to realise that many of these children prefer buying in school simply because of variety. There is so much choice to be made, each one making their individual choices of meat pies(turnovers), sausage rolls, cup cakes, lamb khebabs, potato chips and a few other assorted snacks.  As a parent myself, at times it sure is easier that way than preparing a snack which will be brought back home barely touched.
Here are some other snacks which my pair don’t mind taking for snack: biscuits, samosa, spring rolls, cakes, chips.

Here is something simple to make for your kids for snack::)

Ingredients

450g pastry flour
350g granulated sugar
30cl vegetable oil
15cl milk
1g cinnamon powder
1g mixed spice
1 tsp bicarbonate of soda
4tsp baking powder
90g sweetened Cadbury Hot chocolate powder
100g dark chocolate
1tbsp vanilla essence
6 eggs

Method:
Switch the oven on. Gas no 3. Place cake cases in cake moulds ready for scooping batter into them.
In a separate bowl, mix all the dry ingredients together til all are well blended. In another dry bowl, whisk the eggs til frothy or well aerated. For Speed, you can place the metalic bowl over a saucepan of hot water. Add oil gradually and keep whisking. Add to dry ingredients, stir and add milk. Blend in melted chocolate.
Scoop a tablespoon of cake batter into cases. Place in oven for 15mins.
Remove from oven when a toothpick placed in the cake comes out clean.

You put some frosting of different colors to decorate these lovely cup cakes.

Enjoy
